Morning Muffins

If you haven’t yet had a chance to try our Muffin Mix (made with organic white flour or organic GF flour), you’re missing out! It’s an endlessly versatile base. So far we have enjoyed blueberry, chocolate chip, lemon poppyseed, and banana nut.

This post is a companion to our muffin mix, in hopes of giving you some confidence to try your own add-ins!

To make a batch of muffins, you will need: 2 eggs, 1/2 cup melted butter, 1/2 cup milk, up to 2 cups of mix-ins.

So, for example, for Blueberry Muffins you would add 2 cups of blueberries. For Chocolate Chip Muffins, two cups of chocolate chips. If you’re feeling adventurous, why not 1 cup blueberry and 1 cup chocolate chips?

Banana Nut Muffins - add 1 mashed banana + 1 cup chopped walnuts

Lemon-Poppyseed Muffins - add the juice from 1 whole lemon + 2 tablespoons of poppy seeds.
* This one is a little special. Squeeze the juice from 1 lemon into a 1/2 cup measuring cup and fill the remaining amount with milk. This way, you don’t end up with too much liquid!

Cinnamon Apple Muffins - add 2 cups of diced apple + 2 tsp ground cinnamon

Carrot Cake Muffins - 1 cup shredded carrots + 1/2 cup chopped pecans + 1/2 cup raisins + 2 tsp cinnamon

If you’re feeling fancy, top your muffins with a Streusel Topping.
Simply grab the following ingredients, mash together with a fork, and sprinkle on top:

  • 1/4 cup flour of choice

  • 1/4 cup sugar (any kind)

  • 1/4 tsp cinnamon

  • pinch of salt

  • 2 tbsp cold butter

The key to the mix-ins is not to add too much extra liquid to the mix. If you add 1/4 cup of applesauce, you should remove 1/4 cup of milk from the recipe instructions. If you have a question about this mix or any of our mixes, don’t hesitate to send us an email or an instagram message.
