Easy Banana Bread

Grain-free, gluten-free, & added-sugar free!

So simple and easy to make - everything just goes into one bowl and then into a loaf pan at 350ºF for 45 minutes to an hour!

This recipe is adapted from Ambitious Kitchen (who has the easiest and best recipes, we make her meals and treats all the time):

Ingredients:

  • 3 very ripe medium bananas, mashed (~ 1 ¼ cups mashed banana)

  • 3 eggs

  • 3 tablespoons milk of choice

  • 1 teaspoon vanilla extract

  • 2 ½ cups packed blanched almond flour

  • ½ cup ground flax seeds

  • 1 teaspoon cinnamon

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup dark chocolate chips

  • 1/2 cup chopped walnuts

  • optional: 1/4 cup maple syrup or coconut sugar if you need extra sweetness

How to:

  1. Preheat oven to 350ºF and line a loaf pan with parchment paper.

  2. In a bowl, mash the bananas and mix together eggs, milk, and vanilla.

  3. Add almond flour, ground flax, cinnamon, baking soda, and salt; stir together.

  4. Fold in the chopped walnuts and chocolate chips, then scrape into the loaf pan.

  5. Bake for 45 minutes to 1 hour - check for done-ness with a knife. When you pull the knife out of the center there should be a little bit of melted chocolate and the moist dough, but not a lot.

  6. Allow to cool for at least 30 minutes before removing it from the pan.
