Easy Banana Bread
Grain-free, gluten-free, & added-sugar free!
This recipe is adapted from Ambitious Kitchen (who has the easiest and best recipes, we make her meals and treats all the time):
Ingredients:
3 very ripe medium bananas, mashed (~ 1 ¼ cups mashed banana)
3 eggs
3 tablespoons milk of choice
1 teaspoon vanilla extract
2 ½ cups packed blanched almond flour
½ cup ground flax seeds
1 teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon salt
½ cup dark chocolate chips
1/2 cup chopped walnuts
optional: 1/4 cup maple syrup or coconut sugar if you need extra sweetness
How to:
Preheat oven to 350ºF and line a loaf pan with parchment paper.
In a bowl, mash the bananas and mix together eggs, milk, and vanilla.
Add almond flour, ground flax, cinnamon, baking soda, and salt; stir together.
Fold in the chopped walnuts and chocolate chips, then scrape into the loaf pan.
Bake for 45 minutes to 1 hour - check for done-ness with a knife. When you pull the knife out of the center there should be a little bit of melted chocolate and the moist dough, but not a lot.
Allow to cool for at least 30 minutes before removing it from the pan.
